Ingredients

  • 2 cups Plant-Based Milk (almond, soy, or oat)
  • 4 oz Dark Chocolate (dairy-free)
  • 2 tablespoons Panela (unrefined cane sugar)
  • 1 each Cinnamon Stick
  • 1/2 cup Dairy-Free Cheese (cut into cubes)
  • 2 slices Bread (optional, for dipping)

Instructions

  1. 1In a medium saucepan, combine the 2 cups of Plant-Based Milk, the 4 oz of Dark Chocolate, the 2 tablespoons of Panela, and the 1 Cinnamon Stick.
  2. 2Place the medium saucepan over medium heat, which is approximately 300-325°F (150-160°C). Stir the mixture constantly with a whisk or spoon for 5 to 8 minutes, until the 4 oz of Dark Chocolate is completely melted and the mixture is smooth and slightly thickened. Do not allow the mixture to boil.
  3. 3Carefully remove and discard the 1 Cinnamon Stick from the saucepan.
  4. 4Pour the hot chocolate mixture evenly into two mugs.
  5. 5Divide the 1/2 cup of Dairy-Free Cheese, cut into cubes, evenly between the two mugs, adding it directly to the hot chocolate. The cheese will soften slightly in the hot liquid.
  6. 6Serve the Chocolate Santafereño immediately. If desired, serve with the 2 slices of Bread for dipping.
