Chocolate Caliente (Hot Chocolate) with Cheese

Ingredients

  • 4 cups Milk
  • 4 tablespoons Unsweetened cocoa powder
  • 4 tablespoons Sugar
  • 1 Cinnamon stick
  • 1 cup Queso Campesino or mozzarella cheese, cubed

Instructions

  1. 1In a large, heavy-bottomed pot, combine the 4 cups of milk, the 4 tablespoons of unsweetened cocoa powder, the 4 tablespoons of sugar, and the 1 cinnamon stick.
  2. 2Place the pot over medium heat, aiming for a temperature of approximately 160-180°F (71-82°C). Heat the mixture for 5 to 10 minutes, stirring occasionally, until it reaches a gentle simmer. You will see small bubbles forming around the edges of the pot and steam rising. Continue to stir until the 4 tablespoons of unsweetened cocoa powder are completely dissolved and no lumps remain.
  3. 3Once the mixture is simmering and the cocoa powder is dissolved, carefully remove and discard the 1 cinnamon stick from the pot.
  4. 4Carefully pour the hot chocolate mixture into 4 individual mugs. Distribute the 1 cup of cubed queso campesino or mozzarella cheese evenly among the 4 mugs, adding approximately 1/4 cup of cheese to each mug.
  5. 5Serve the hot chocolate immediately. The heat from the drink will melt the cheese cubes, creating a rich and creamy texture as you drink.
