Ingredients

  • 2 cups Tapioca starch
  • 1 cup Grated hard cheese (e.g., Parmesan, Sardo)
  • 1 medium Grated apple
  • 0.5 cup Milk
  • 0.25 cup Vegetable oil
  • 1 large Egg
  • 0.5 tsp Salt

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Preheat your oven to about 205°C (200°C).
  2. 2In a large mixing bowl, combine the 2 cups of tapioca starch, the 1 cup of grated hard cheese, and the 1 medium grated apple. Stir these ingredients together until they are evenly distributed.
  3. 3In a small saucepan, heat the 0.5 cup of milk and the 0.25 cup of vegetable oil over medium heat until the mixture just begins to simmer, showing small bubbles around the edges. Carefully pour the hot liquid mixture over the dry ingredients in the large mixing bowl and mix thoroughly with a spoon until everything is well combined and a shaggy dough starts to form.
  4. 4Add the 1 large egg and the 0.5 tsp of salt to the mixture in the bowl. Continue to mix, first with a spoon and then with your hands, until a smooth, cohesive dough forms.
  5. 5Take small portions of the dough and roll them between your palms to form individual balls, each approximately 2.54 cm (2.5 cm) in diameter.
  6. 6Line a baking sheet with parchment paper. Arrange the shaped dough balls on the prepared baking sheet, leaving a small space between each one.
  7. 7Bake the chipá in the preheated oven for 20 to 25 minutes, or until they are puffed up and golden brown on the outside.
