Ingredients

  • 2 1/2 cups All-purpose flour
  • 2 1/4 tsp Active dry yeast
  • 2 tbsp Sugar
  • 1 cup Warm water
  • 1 tbsp Vegetable oil
  • 8 oz Mushrooms (shiitake)
  • 2 tbsp Soy sauce (wheat-free tamari)
  • 1 tbsp Oyster sauce (mushroom-based)
  • 1 tsp Sesame oil (toasted)
  • 2 stalks Green onions

Instructions

  1. 1In a large bowl, combine flour, yeast, and sugar. Add warm water and vegetable oil, and mix until a dough forms.
  2. 2Knead the dough for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
  3. 3Meanwhile, prepare the filling. Chop the mushrooms and sauté them in a pan with soy sauce, mushroom-based oyster sauce, and sesame oil until tender.
  4. 4Punch down the dough and divide it into 12 equal portions. Roll out each portion into a circle.
  5. 5Place a spoonful of mushroom filling in the center of each circle and pinch the edges together to seal.
  6. 6Place the buns on squares of parchment paper and steam for 15-20 minutes, or until cooked through.
  7. 7Garnish with sliced green onions before serving.
