Ingredients

  • 1.5 lb Chicken Breast, cubed
  • 1/4 cup Olive Oil
  • 2 tbsp Lemon Juice
  • 3 cloves Garlic, minced
  • 1 tbsp Curry Powder
  • 1/2 tsp Turmeric
  • 1/4 cup Dried Apricots, chopped
  • 1 medium Red Onion, sliced
  • 2 medium Bell Peppers, cubed (various colors)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Sunflower Seed Butter
  • 1/2 cup Coconut Milk
  • 2 tbsp Soy Sauce (Tamari)
  • 1 tbsp Rice Vinegar
  • 1 tbsp Honey
  • 1 tsp Sriracha (optional)

Instructions

  1. 1In a medium bowl, whisk together the 1/4 cup olive oil, 2 tablespoons lemon juice, 3 cloves minced garlic, 1 tablespoon curry powder, 1/2 teaspoon turmeric, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the 1.5 lb cubed chicken breast and the 1/4 cup chopped dried apricots to the bowl. Stir everything together to coat the chicken and apricots evenly. Cover the bowl and place it in the refrigerator to marinate for at least 30 minutes.
  2. 2While the chicken is marinating, prepare your skewers. Thread the marinated chicken cubes onto skewers, alternating them with pieces of the 1 medium sliced red onion and the 2 medium cubed bell peppers. You should have about 4-6 skewers.
  3. 3Preheat your grill to medium heat. This is approximately 375°F to 400°F (190°C to 200°C).
  4. 4Place the prepared skewers on the preheated grill. Grill for 15 to 20 minutes, turning them occasionally, until the chicken is cooked through and has reached an internal temperature of 165°F (74°C). The chicken should be opaque and no longer pink inside.
  5. 5While the skewers are grilling, make the satay sauce. In a small saucepan, combine the 1/4 cup sunflower seed butter, 1/2 cup coconut milk, 2 tablespoons soy sauce (tamari), 1 tablespoon rice vinegar, 1 tablespoon honey, and 1 teaspoon sriracha (if using).
  6. 6Place the saucepan over low heat. Stir the sauce constantly for 3 to 5 minutes, until it is smooth and heated through. Do not let it boil.
  7. 7Once the chicken skewers are cooked, remove them from the grill. Serve the chicken sosaties immediately with the warm satay sauce on the side for dipping.
