Ingredients

  • 1.5 lbs Chicken thighs
  • 2 tbsp Shawarma spice blend
  • 2 tbsp Olive oil
  • 3 cups Cooked basmati rice
  • 1 cup Chopped cucumber
  • 1 cup Diced tomatoes
  • 0.5 cup Red onion, thinly sliced
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Tahini
  • 3 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 2 tbsp Water
  • 0.5 tsp Salt

Instructions

  1. 1In a bowl, combine chicken thighs with shawarma spice blend and olive oil. Marinate for at least 15 minutes.
  2. 2Heat a large skillet over medium-high heat. Cook chicken until fully cooked and slightly charred, about 6-8 minutes per side.
  3. 3While chicken is cooking, prepare the tahini dressing by whisking together tahini, lemon juice, minced garlic, water, and salt in a small bowl until smooth.
  4. 4Slice the cooked chicken into thin strips.
  5. 5Assemble the bowls with cooked basmati rice, chopped cucumber, diced tomatoes, red onion, sliced shawarma chicken, and fresh parsley.
  6. 6Drizzle generously with tahini dressing and serve immediately.
