Ingredients

  • 4 medium Chicken Breasts
  • 8 slices Ham
  • 8 slices Swiss Cheese
  • 1 cup Gluten-Free Breadcrumbs
  • 1 large Egg
  • 2 tablespoons Milk (Dairy or Dairy-Free)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. 1Preheat your oven to 375°F (190°C). In a shallow dish, combine the 1 cup Gluten-Free Breadcrumbs, 1 teaspoon Garlic Powder, 1 teaspoon Onion Powder, 0.5 teaspoon Paprika, 0.5 teaspoon Salt, and 0.25 teaspoon Black Pepper; stir these ingredients together until they are well mixed. In a separate shallow dish, whisk together the 1 large Egg and 2 tablespoons Milk until fully combined.
  2. 2Place each of the 4 medium Chicken Breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or a heavy pan, pound each chicken breast until it is about 1/4 inch thick and an even thickness.
  3. 3On each flattened chicken breast, layer 2 slices Ham and 2 slices Swiss Cheese. Carefully fold each chicken breast in half or roll it up tightly to enclose the ham and cheese, then secure each stuffed chicken breast with 2-3 toothpicks to hold its shape.
  4. 4Dip one stuffed chicken breast into the egg and milk mixture, ensuring it is fully coated, then let any excess liquid drip off. Immediately transfer the chicken breast to the breadcrumb mixture, pressing gently to ensure it is completely covered on all sides with the seasoned gluten-free breadcrumbs; repeat this process for all 4 stuffed chicken breasts.
  5. 5Heat the 2 tablespoons Olive Oil in a large, oven-safe skillet (such as a 10-12 inch cast iron or stainless steel skillet) over medium heat. Once the oil is shimmering, carefully place the breaded chicken breasts into the hot skillet and sear for 2-3 minutes per side, turning with tongs, until each side is golden brown.
  6. 6Carefully transfer the skillet with the seared chicken breasts to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through, the cheese is melted and bubbly, and an instant-read thermometer inserted into the thickest part of the chicken (avoiding the filling) reads 165°F (74°C).
  7. 7Carefully remove the skillet from the oven and let the chicken rest in the skillet for 5 minutes. Before serving, remove all toothpicks from each chicken breast.
