Ingredients

  • 2 lbs Chicken thighs
  • 1/2 cup Coconut aminos
  • 1/4 cup Apple cider vinegar
  • 6 cloves Garlic
  • 2 Bay leaves
  • 1 tsp Black peppercorns
  • 2 tbsp Coconut oil
  • 1/2 cup Water
  • 4 cups Cooked rice

Instructions

  1. 1Heat coconut oil in a large pot over medium-high heat.
  2. 2Add chicken thighs and brown on all sides.
  3. 3Add coconut aminos, apple cider vinegar, garlic, bay leaves, peppercorns, and water to the pot.
  4. 4Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until chicken is cooked through and sauce has thickened.
  5. 5Serve hot over cooked rice.
