Ingredients

  • 2 lbs Chicken Thighs
  • 1 cup Coconut Aminos
  • 1/2 cup Apple Cider Vinegar
  • 6 cloves Garlic
  • 2 leaves Bay Leaves
  • 1 tsp Black Peppercorns
  • 2 tbsp Coconut Oil
  • 4 cups Cooked White Rice

Instructions

  1. 1Heat coconut oil in a large pot or Dutch oven over medium-high heat.
  2. 2Add chicken thighs and brown on all sides.
  3. 3Add coconut aminos, apple cider vinegar, garlic, bay leaves, and black peppercorns to the pot.
  4. 4Bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes, or until chicken is cooked through and tender.
  5. 5Serve hot over white rice.
