Ingredients

  • 2 pounds Pork belly, skin on
  • 2 tablespoons Salt
  • 4 cups Water
  • 4 cups Vegetable oil, for frying

Instructions

  1. 1Cut the pork belly into 1-inch thick strips.
  2. 2Place the pork belly in a large pot and add the salt and water. Bring to a boil over high heat.
  3. 3Reduce the heat to medium-low and simmer for 30 minutes, or until the pork is tender.
  4. 4Remove the pork belly from the pot and pat it dry with paper towels.
  5. 5Heat the vegetable oil in a deep fryer or large pot to 300°F (150°C).
  6. 6Fry the pork belly in batches until golden brown and crispy, about 10-15 minutes.
  7. 7Remove the chicharrones and drain on paper towels. Season with additional salt to taste. Serve hot.
