Ingredients

  • 2 cups Certified Gluten-Free Rolled Oats
  • 1.5 cups Gluten-Free All-Purpose Flour Blend
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 0.5 tsp Salt
  • 0.75 cup Vegan Butter
  • 0.75 cup Brown Sugar
  • 0.25 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 cup Raisins

Instructions

  1. 1Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. 2In a medium bowl, whisk together the certified gluten-free rolled oats, gluten-free flour blend, baking soda, cinnamon, and salt.
  3. 3In a large bowl, cream together the vegan butter, brown sugar, and maple syrup until smooth and well combined.
  4. 4Stir in the vanilla extract.
  5. 5Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. 6Fold in the raisins.
  7. 7Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. 8Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are still slightly soft.
  9. 9Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
