Ingredients

  • 2 cans (13.5 oz each) Coconut Milk
  • 1/2 cup Tapioca Pearls (small)
  • 4 medium Bananas, ripe
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1 tablespoon Roasted Sesame Seeds

Instructions

  1. 1Rinse tapioca pearls in a fine-mesh sieve.
  2. 2In a saucepan, combine coconut milk, tapioca pearls, sugar, vanilla extract, and salt.
  3. 3Bring to a simmer over medium heat, stirring constantly to prevent sticking.
  4. 4Reduce heat to low and cook for 15-20 minutes, or until tapioca pearls are translucent and the mixture has thickened slightly.
  5. 5Peel and slice bananas. Gently stir the bananas into the pudding.
  6. 6Cook for another 5 minutes, or until the bananas are heated through.
  7. 7Serve warm or chilled. Garnish with roasted sesame seeds.
