Charquican (Chilean Stew)

Ingredients

  • 1 lb Ground Beef
  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 cups Diced Potatoes
  • 1 cup Pumpkin
  • 1 cup Corn
  • 1 cup Peas
  • 4 cups Beef Broth
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add ground beef and cook until browned, breaking it up with a spoon.
  3. 3Add onion and garlic and cook until softened, about 5 minutes.
  4. 4Add potatoes, pumpkin, corn, peas, beef broth, oregano, salt, and pepper.
  5. 5Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until vegetables are tender.
  6. 6Mash some of the potatoes and pumpkin to thicken the stew.
  7. 7Serve hot.
