Chakalaka with Pap

A spicy vegetable relish (chakalaka) served with a maize porridge (pap). A traditional South African side dish.

Ingredients

  • 2 large Onion
  • 2 large Bell Peppers
  • 2 medium Carrots
  • 1 can Baked Beans
  • 2 tbsp Tomato Paste
  • 1 tsp Chili Powder
  • 1 tsp Curry Powder
  • 2 tbsp Vegetable Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 cups Maize Meal
  • 4 cups Water

Instructions

  1. 1Heat vegetable oil in a large pot.
  2. 2Sauté chopped onions, bell peppers, and carrots until softened.
  3. 3Add tomato paste, chili powder, and curry powder; cook for 2 minutes.
  4. 4Stir in baked beans; season with salt and pepper.
  5. 5Simmer for 20-25 minutes, or until vegetables are tender.
  6. 6For the pap, bring water to a boil in a separate pot.
  7. 7Gradually whisk in maize meal.
  8. 8Reduce heat and simmer for 20-25 minutes, stirring frequently, until the pap thickens to a porridge-like consistency.
  9. 9Serve chakalaka hot with pap.
