Ingredients

  • 1 cup Black-eyed peas
  • 1/2 cup Sweet sticky rice (glutinous rice)
  • 2 cans (13.5oz each) Coconut milk
  • 3/4 cup Sugar
  • 1/4 tsp Salt
  • 2-3 leaves Pandan leaves (optional)

Instructions

  1. 1Rinse the black-eyed peas and soak them in water for at least 4 hours or overnight.
  2. 2Rinse the sticky rice and soak it in water for at least 2 hours.
  3. 3Drain the black-eyed peas and rice. Place them in a pot with enough water to cover them.
  4. 4Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the peas and rice are tender.
  5. 5In a separate pot, combine coconut milk, sugar, salt, and pandan leaves (if using). Heat over medium heat, stirring until the sugar dissolves.
  6. 6Add the cooked black-eyed peas and rice to the coconut milk mixture. Simmer for another 15 minutes, stirring occasionally.
  7. 7Remove from heat and let cool slightly. Serve warm or chilled.
