Ingredients

  • 4 cups Coconut milk
  • 1 cup Water
  • 1/2 cup Small tapioca pearls
  • 3 medium Ripe bananas, sliced
  • 1/4 cup Sugar
  • 1 pinch Pinch of salt
  • 1/2 teaspoon Vanilla extract

Instructions

  1. 1In a large heavy-bottomed pot, combine the 4 cups of coconut milk, 1 cup of water, 1/2 cup of small tapioca pearls, 1/4 cup of sugar, and 1 pinch of salt.
  2. 2Place the pot over medium-high heat and bring the mixture to a boil, stirring occasionally. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer gently for 15 to 20 minutes. Stir every few minutes to prevent sticking. The tapioca pearls are ready when they have become translucent, meaning you can no longer see a white dot in the center of each pearl.
  3. 3Gently stir in the 3 medium ripe bananas, sliced, and the 1/2 teaspoon of vanilla extract. Continue to cook over low heat for another 2 to 3 minutes, stirring carefully, just until the bananas are heated through. Be careful not to overcook the bananas, as they can become mushy.
  4. 4Serve the Chè Chuối warm in bowls.
