Ingredients

  • 2 lb Yellow Potatoes
  • 2 large Avocado
  • 1/4 cup Lime Juice
  • 1/2 cup Mayonnaise (Gluten-Free)
  • 1 cup Shredded Chicken (cooked)
  • 2 tbsp Aji Amarillo Paste
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 cup Cilantro

Instructions

  1. 1Place the 2 lb Yellow Potatoes in a large heavy-bottomed pot and cover them with cold water by at least 1 inch (2.5 cm). Bring the water to a rolling boil over high heat (212°F / 100°C), then reduce the heat to medium and cook for 15-20 minutes, or until the potatoes are easily pierced with a fork. Drain the potatoes completely, then return them to the pot or transfer to a large bowl and mash until smooth; stir in the 2 tbsp Aji Amarillo Paste, 1/2 tsp Salt, and 1/4 tsp Pepper until well combined.
  2. 2Spread the mashed potato mixture evenly on a clean plate or shallow dish and allow it to cool completely to room temperature, which will take about 20-30 minutes. Cooling is essential to ensure the layers hold their shape during assembly.
  3. 3In a food processor or blender, combine the 2 large Avocado (peeled and pitted), 1/4 cup Lime Juice, 1/4 cup Mayonnaise (Gluten-Free), 1/4 tsp Salt, and 1/8 tsp Pepper. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.
  4. 4In a medium bowl, combine the 1 cup Shredded Chicken (cooked), the remaining 1/4 cup Mayonnaise (Gluten-Free), the remaining 1/4 tsp Salt, the remaining 1/8 tsp Pepper, and the 1/4 cup Cilantro (finely chopped). Mix thoroughly until all ingredients are evenly distributed.
  5. 5To assemble, choose a 9x5 inch (23x13 cm) loaf pan or four individual serving glasses. Press half of the cooled mashed potato mixture evenly into the bottom of the pan or glasses to form the first layer. Carefully spread the entire avocado cream mixture over the potato layer, then spoon the chicken filling evenly over the avocado cream. Top with the remaining half of the mashed potato mixture, gently pressing down to create a firm and even top layer.
  6. 6Cover the assembled causa tightly with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours, to allow the layers to set and the flavors to meld before serving.
