Cassava Pone

Ingredients

  • 3 cups Grated Cassava (Yuca)
  • 1.5 cups Grated Coconut
  • 1 cup Brown Sugar
  • 1 can Evaporated Milk
  • 0.5 cup Coconut Milk
  • 0.5 cup Melted Butter
  • 0.5 cup Raisins (optional)
  • 1 teaspoon Mixed Spice (Cinnamon, Nutmeg, Allspice)
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1Preheat your oven to 350°F (175°C). Lightly grease a baking dish with a small amount of the 0.5 cup Melted Butter.
  2. 2In a large mixing bowl, combine the 3 cups Grated Cassava, 1.5 cups Grated Coconut, 1 cup Brown Sugar, 1 teaspoon Mixed Spice, and 0.5 cup Raisins (if you are using them).
  3. 3Pour in the 1 can Evaporated Milk, 0.5 cup Coconut Milk, the remaining 0.5 cup Melted Butter, and 1 teaspoon Vanilla Extract into the bowl.
  4. 4Stir all the ingredients together thoroughly until they are well combined and the mixture is uniform.
  5. 5Pour the entire mixture into the prepared baking dish. Bake for 50 to 60 minutes in the preheated oven at 350°F (175°C).
  6. 6The pone is done when a toothpick inserted into the center comes out clean, and the top is golden brown.
  7. 7Allow the Cassava Pone to cool slightly in the baking dish before slicing and serving. Cooling helps it set and makes it easier to cut.
