Ingredients

  • 2 medium Sweet Potatoes (diced)
  • 1 can Black Beans (canned, rinsed and drained)
  • 1/2 medium Red Onion (diced)
  • 1/2 medium Red Bell Pepper (diced)
  • 2 tbsp Coconut Oil
  • 2 cloves Garlic (minced)
  • 1 tbsp Curry Powder
  • 1/2 tsp Chili Powder
  • 1/4 tsp Ground Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Unsweetened Coconut Flakes (toasted, for garnish)
  • 2 tbsp Chopped Cilantro (for garnish)

Instructions

  1. 1Heat coconut oil in a large skillet over medium heat. Add sweet potatoes and red onion, and cook until softened, about 8-10 minutes.
  2. 2Add red bell pepper and garlic, and cook for 2 minutes more.
  3. 3Stir in curry powder, chili powder, cumin, salt, and pepper. Cook for 1 minute, stirring constantly.
  4. 4Add black beans and cook until heated through, about 3-5 minutes.
  5. 5Garnish with toasted coconut flakes and chopped cilantro before serving.
