Canjica (Corn Pudding)

Ingredients

  • 1 lb Hominy (Dried Corn Kernels)
  • 6 cups Milk
  • 1 cup Sugar
  • 2 sticks Cinnamon Sticks
  • 1 tsp Ground Cinnamon
  • 1/2 can Sweetened Condensed Milk (Optional)

Instructions

  1. 1Soak the hominy in water overnight.
  2. 2The next day, drain the hominy and place it in a large pot.
  3. 3Add the milk, sugar, and cinnamon sticks.
  4. 4Bring to a boil, then reduce heat and simmer for 1 hour, or until the hominy is tender and the mixture has thickened.
  5. 5Remove the cinnamon sticks. Stir in sweetened condensed milk (if using).
  6. 6Sprinkle with ground cinnamon and serve warm or cold.
