Camote Cue

Deep-fried caramelized sweet potato on a stick. A classic Filipino street food snack that is naturally dairy-free.

Ingredients

  • 2 large Sweet Potatoes (Camote)
  • 1/2 cup Brown Sugar
  • 1 cup Vegetable Oil
  • 4 pieces Bamboo Skewers

Instructions

  1. 1Peel the 2 large Sweet Potatoes and cut them into 1-inch cubes.
  2. 2Thread the sweet potato cubes onto the 4 pieces of Bamboo Skewers, making sure they are secure.
  3. 3Pour the 1 cup of Vegetable Oil into a large, heavy-bottomed pot or deep skillet. Heat the oil over medium heat until it reaches 350°F (175°C).
  4. 4Carefully add the skewered sweet potatoes to the hot 1 cup of Vegetable Oil. Fry them for 8-10 minutes, turning occasionally, until they are tender and golden brown on all sides.
  5. 5While the sweet potatoes are frying, sprinkle the 1/2 cup of Brown Sugar evenly over them. Continue frying for another 2-3 minutes, allowing the sugar to melt and caramelize, coating the sweet potatoes.
  6. 6Using tongs, carefully remove the skewers from the hot oil. Let any excess oil drip back into the pot for a moment.
  7. 7Place the caramelized sweet potato skewers on a plate lined with paper towels to absorb any extra oil. Let them cool slightly for about 2-3 minutes before serving.
