Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1/4 cup Sugar
  • 2 Eggs
  • 1/2 cup Almond milk
  • 1 teaspoon Vanilla extract
  • for frying Vegetable oil

Instructions

  1. 1In a large mixing bowl, combine the 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1/4 teaspoon of salt, and 1/4 cup of sugar. Whisk these dry ingredients together until they are evenly mixed.
  2. 2In a separate medium-sized bowl, whisk together the 2 eggs, 1/2 cup of almond milk, and 1 teaspoon of vanilla extract until well combined.
  3. 3Pour the wet ingredients from the medium bowl into the large bowl with the dry ingredients. Mix with a spoon or your hands until a soft, cohesive dough forms, then knead gently for 1-2 minutes until it is smooth.
  4. 4Lightly dust a clean, flat surface with some of the remaining all-purpose flour. Place the dough on the floured surface and use a rolling pin to roll it out into a rectangle approximately 1/8-inch thick. Use a knife or pastry wheel to cut the dough into strips about 1-inch wide and 4-5 inches long.
  5. 5Take each dough strip and make a 1-inch long slit in the center. Carefully pull one end of the strip through the slit, creating a twisted shape. Repeat this process for all the dough strips.
  6. 6Pour enough vegetable oil into a large, heavy-bottomed skillet (such as a 12-inch cast iron or non-stick skillet) to reach a depth of about 1 inch. Heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of dough into it; it should sizzle immediately and float to the surface.
  7. 7Carefully place 3-4 shaped dough pieces into the hot oil, ensuring not to overcrowd the skillet. Fry for 1-2 minutes per side, turning with tongs, until they are puffed up and golden brown. The total frying time per batch will be 2-4 minutes.
  8. 8Using tongs or a slotted spoon, remove the fried calzones rotos from the skillet. Transfer them to a plate lined with paper towels to drain any excess oil. Repeat with the remaining dough pieces.
  9. 9Once all the calzones rotos are fried and drained, arrange them on a serving platter. Dust generously with powdered sugar before serving them warm.
