Ingredients

  • 2 cups Cooked Rice
  • 1 1/2 cups Cooked Red Beans
  • 2 medium Cooked Plantains (sweet)
  • 6 oz Chorizo (dairy-free)
  • 4 large Scrambled Eggs (made with plant-based milk)
  • 1 medium Avocado
  • 1/2 cup Hogao (Colombian Tomato & Onion Sauce)
  • 2 tablespoons Vegetable Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1Dice the chorizo and plantains.
  2. 2Heat the vegetable oil in a large skillet over medium heat.
  3. 3Add the chorizo and plantains to the skillet and cook until slightly browned, about 5-7 minutes.
  4. 4Add the cooked rice, red beans, and hogao to the skillet. Stir well to combine.
  5. 5Cook, stirring occasionally, until heated through, about 10 minutes.
  6. 6Prepare scrambled eggs using plant-based milk instead of dairy milk.
  7. 7Serve the calentado topped with scrambled eggs and slices of avocado. Season with salt and pepper to taste.
