Caldo Verde (Vegan)

Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1.5 lbs Potatoes, peeled and cubed
  • 6 cups Vegetable broth
  • 1 13.5-oz can Coconut milk
  • 6 cups Kale, thinly sliced
  • 1/2 tsp Salt
  • 1/4 tsp White pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and cook for another minute until fragrant.
  4. 4Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are very tender.
  5. 5Carefully blend the soup using an immersion blender until smooth. (Alternatively, transfer to a regular blender in batches.)
  6. 6Stir in coconut milk and kale. Cook for another 5 minutes, or until kale is tender.
  7. 7Season with salt and white pepper to taste.

Substitutions

Coconut milk(avoids Dairy)

Replaces dairy milk for creaminess.
