Cajun Sweet Potato Fries with Chipotle Aioli

Ingredients

  • 2 large Sweet potatoes
  • 2 tbsp Olive oil
  • 2 tbsp Cajun seasoning
  • 1/2 cup Mayonnaise
  • 1 tbsp Chipotle peppers in adobo sauce
  • 1 tsp Lime juice
  • 1 clove Garlic

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 2 large sweet potatoes. Carefully cut each sweet potato lengthwise into 1/4-inch (0.6 cm) thick fries.
  2. 2In a large bowl, combine the cut sweet potatoes with the 2 tbsp of olive oil and the 2 tbsp of Cajun seasoning. Toss the sweet potatoes until they are evenly coated with the oil and seasoning.
  3. 3Spread the seasoned sweet potatoes in a single layer on a large baking sheet. Bake for 20-25 minutes at 400°F (200°C), flipping them halfway through the cooking time. The fries are done when they are golden brown and crispy.
  4. 4While the sweet potatoes bake, prepare the aioli. Mince the 1 clove of garlic finely.
  5. 5In a food processor, combine the 1/2 cup of mayonnaise, the 1 tbsp of chipotle peppers in adobo sauce, the 1 tsp of lime juice, and the minced 1 clove of garlic. Pulse the mixture until it is completely smooth.
  6. 6Serve the crispy sweet potato fries immediately with the chipotle aioli on the side.
