Cajun Sweet Potato Fries with Chipotle Aioli

Ingredients

  • 2 large Sweet potatoes, peeled and cut into fries
  • 2 tbsp Olive oil
  • 2 tbsp Cajun seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 cup Dairy-free mayonnaise
  • 1 tbsp Chipotle peppers in adobo sauce, minced
  • 1 tsp Lime juice
  • 1 clove Garlic, minced

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, combine the 2 large sweet potatoes (cut into fries), 2 tbsp olive oil, 2 tbsp Cajun seasoning, 0.5 tsp salt, and 0.25 tsp black pepper. Toss everything together until the sweet potato fries are evenly coated.
  3. 3Spread the coated sweet potato fries in a single layer on a baking sheet. Make sure they are not overlapping so they bake evenly.
  4. 4Bake for 20-25 minutes. Flip the fries halfway through the baking time. The fries are done when they are golden brown and tender when poked with a fork.
  5. 5While the fries are baking, prepare the chipotle aioli. In a small bowl, whisk together the 0.5 cup dairy-free mayonnaise, 1 tbsp chipotle peppers in adobo sauce (minced), 1 tsp lime juice, and 1 clove garlic (minced) until well combined.
  6. 6Serve the baked sweet potato fries warm with the prepared chipotle aioli.
