Ingredients

  • 2 large Sweet Potatoes
  • 1 can Black Beans
  • 2 tbsp Cajun Spice Blend
  • 2 tbsp Olive Oil
  • 2 Avocado
  • 1/4 cup Red Onion
  • 2 tbsp Lime Juice
  • 1/4 cup Cilantro
  • 2 cups Cooked Quinoa

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Peel and dice sweet potatoes. Toss with olive oil and Cajun spice blend. Spread on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
  3. 3While sweet potatoes roast, prepare the avocado salsa by dicing the avocado and red onion. Combine with lime juice and chopped cilantro.
  4. 4Warm the black beans. Drain and rinse, then heat through in a saucepan.
  5. 5Assemble the bowls with cooked quinoa, roasted sweet potatoes, warmed black beans, and avocado salsa.
