Ingredients

  • 4 fillets Catfish Fillets
  • 2 tablespoons Cajun Seasoning
  • 3 tablespoons Olive Oil
  • 1 cup Rice
  • 2 cups Chicken Broth
  • 0.5 lb Ground Pork
  • 0.5 cup Onion (diced)
  • 0.5 cup Bell Pepper (diced)
  • 0.25 cup Celery (diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Cajun Seasoning (for rice)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Coat catfish fillets with Cajun seasoning.
  2. 2Heat olive oil in a large skillet over medium-high heat.
  3. 3Pan-fry catfish fillets for 4-5 minutes per side, until cooked through and golden brown.
  4. 4While catfish is cooking, prepare the dirty rice: In a separate skillet, brown ground pork over medium heat. Drain any excess fat.
  5. 5Add onion, bell pepper, and celery to the skillet. Sauté until softened, about 5 minutes.
  6. 6Add garlic and cook for 1 minute more.
  7. 7Stir in rice, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  8. 8Serve catfish fillets with dirty rice on the side.
