Café Touba (Spiced Coffee)

Ingredients

  • 4 tablespoons Ground Coffee
  • 1 tablespoon Guinea Pepper (Djar)
  • 1 teaspoon Whole Cloves
  • 4 cups Water
  • 2 tablespoons Sugar (Optional)

Instructions

  1. 1In a mortar and pestle or a spice grinder, grind the 1 tablespoon of Guinea Pepper (Djar) and 1 teaspoon of Whole Cloves until finely powdered.
  2. 2Place a medium saucepan on the stove over medium heat. Add the 4 cups of Water, the 4 tablespoons of Ground Coffee, and the ground spice mixture. Stir to combine.
  3. 3Bring the mixture to a rolling boil, then immediately reduce the heat to low. Let it simmer gently for 5 minutes, stirring occasionally. You will notice a strong, spicy aroma filling the air.
  4. 4Carefully pour the coffee mixture through a fine-mesh sieve or a piece of cheesecloth placed over a heatproof bowl or another saucepan. This will separate the liquid coffee from the grounds and spices.
  5. 5Serve the Café Touba hot in mugs. If desired, stir in the 2 tablespoons of Sugar (Optional) to taste. Enjoy this aromatic Senegalese coffee.
