Ingredients

  • 1 lb Firm tofu
  • 1 lb Green beans
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Turmeric powder
  • 0.5 tsp Chili powder
  • 2 tbsp Soy sauce
  • 1 can Coconut milk
  • 2 tbsp Vegetable oil
  • 4 cups Steamed Rice

Instructions

  1. 1Press tofu to remove excess water, then cut into 1-inch cubes. Trim green beans.
  2. 2Dice onion. Mince garlic and ginger.
  3. 3Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and ginger and sauté until fragrant, about 5 minutes.
  4. 4Add turmeric powder and chili powder. Cook for 1 minute, stirring constantly.
  5. 5Add tofu and green beans to the pot. Cook for 5-7 minutes, stirring occasionally, until tofu is lightly browned and green beans are slightly softened.
  6. 6Pour in coconut milk and soy sauce. Bring to a simmer, then reduce heat and cover. Cook for 10-15 minutes, or until green beans are tender and flavors have melded.
  7. 7Serve hot with steamed rice.
