Burmese Tofu Curry

Ingredients

  • 1 block Firm tofu
  • 1 can Coconut milk
  • 2 cups Tomatoes
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 1 tsp Turmeric powder
  • 1/2 tsp Chili powder
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1 tbsp Lime juice
  • 2 tbsp Vegetable oil
  • 1/4 cup Cilantro

Instructions

  1. 1Heat vegetable oil in a large pan over medium heat.
  2. 2Add diced onion and cook until softened, about 5 minutes.
  3. 3Add minced garlic and ginger and cook for another minute until fragrant.
  4. 4Add cubed tofu and cook until lightly browned on all sides.
  5. 5Stir in turmeric powder, chili powder, cumin, and coriander.
  6. 6Add diced tomatoes and coconut milk. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  7. 7Stir in lime juice. Garnish with chopped cilantro before serving.
