Ingredients

  • 2 cups All-purpose flour
  • 3/4 cup Water
  • 1/2 tsp Salt
  • 1/4 cup Coconut oil
  • 2 tbsp Tamarind paste
  • 1 tbsp Fish sauce
  • 1 tbsp Palm sugar
  • 1/4 tsp Chili flakes

Instructions

  1. 1Make the dough: In a large bowl, combine flour and salt. Gradually add water, mixing until a dough forms. Knead the dough for 5-7 minutes until smooth and elastic.
  2. 2Rest the dough: Cover the dough with a damp cloth and let it rest for at least 15 minutes.
  3. 3Divide and roll: Divide the dough into 4 equal portions. Roll each portion into a thin circle.
  4. 4Cook the palata: Heat coconut oil in a skillet or griddle over medium heat. Cook each palata for 2-3 minutes per side, or until golden brown and cooked through.
  5. 5Make the dipping sauce: In a small saucepan, combine tamarind paste, fish sauce, palm sugar, and chili flakes (if using). Heat over low heat, stirring until the sugar dissolves and the sauce thickens slightly.
  6. 6Serve: Serve the warm palata with the dipping sauce.
