Ingredients

  • 2 medium Eggplant
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Turmeric Powder
  • 0.5 tsp Chili Powder
  • 1 can Coconut Milk
  • 2 tbsp Tomato Paste
  • 1 tbsp Soy Sauce
  • 2 tbsp Cilantro
  • 2 tbsp Vegetable Oil

Instructions

  1. 1Heat vegetable oil in a large skillet or pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
  2. 2Add minced garlic and grated ginger and sauté for another minute until fragrant.
  3. 3Stir in turmeric powder and chili powder. Cook for 30 seconds.
  4. 4Add cubed eggplant and sauté for 5 minutes, stirring occasionally.
  5. 5Stir in tomato paste, soy sauce, and coconut milk. Bring to a simmer, cover, and cook for 20 minutes, or until eggplant is tender.
  6. 6Garnish with chopped cilantro and serve hot with rice.
