Bunny Chow 'Fingers' (Dairy & Egg Free)

A deconstructed version of the classic Bunny Chow, perfect for little fingers! This recipe uses plant-based butter and milk to avoid dairy and a lentil based curry.

Ingredients

  • 1 cup Lentils
  • 3 cups Vegetable Broth
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Curry Powder
  • 1/2 tsp Turmeric
  • 1 can Tomatoes (diced)
  • 2 tbsp Plant-Based Butter
  • 8 slices White Bread

Instructions

  1. 1Rinse lentils and combine them in a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until tender.
  2. 2While lentils are cooking, sauté onion and garlic in plant-based butter until softened.
  3. 3Add curry powder and turmeric and cook for 1 minute more.
  4. 4Add diced tomatoes and simmer for 10 minutes.
  5. 5Combine the cooked lentils with the tomato mixture and simmer for another 5 minutes.
  6. 6Cut each slice of bread into 4 'fingers'.
  7. 7Serve the lentil curry with the bread fingers for dipping.
