Ingredients

  • 1 cup Buckwheat Groats (Kasha)
  • 2 cups Vegetable Broth
  • 8 oz Mushrooms, sliced
  • 2 medium Onions, thinly sliced
  • 2 tablespoons Olive Oil
  • 1 tablespoon Fresh Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Rinse the buckwheat groats under cold water.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add onions and cook until caramelized, about 20 minutes, stirring occasionally.
  4. 4Add sliced mushrooms and thyme to the skillet and cook until mushrooms are softened and browned, about 5 minutes.
  5. 5Add buckwheat groats to the skillet and stir to coat with oil and onions.
  6. 6Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until liquid is absorbed and kasha is tender.
  7. 7Season with salt and pepper to taste. Serve hot.
