Ingredients

  • 1 cup Rice
  • 1/2 lb Ground beef
  • 1/2 cup Carrot, diced
  • 1/2 cup Potato, diced
  • 1/2 cup Onion, diced
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 1 can Coconut milk
  • 6 cups Chicken broth
  • 2 tbsp Tapioca starch
  • 1/4 cup Water
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Cilantro, chopped

Instructions

  1. 1Rinse the rice. In a large pot, combine the rice, ground beef, carrot, potato, onion, garlic, ginger, coconut milk, and chicken broth.
  2. 2Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the rice is very soft and the vegetables are tender, stirring occasionally.
  3. 3In a small bowl, whisk together tapioca starch and water to form a slurry. Add the slurry to the porridge and stir until thickened.
  4. 4Season with salt and pepper to taste.
  5. 5Garnish with chopped cilantro and serve hot.
