Bubur Lambuk (Dairy-Free)

A creamy and flavorful Malaysian rice porridge traditionally made with meat, vegetables, and spices, adapted here to be dairy-free with coconut milk for richness.

Ingredients

  • 1 cup Rice
  • 6 cups Chicken broth
  • 1 can Coconut milk
  • 1 cup Chicken, cooked and shredded
  • 1 1/2 cups Mixed vegetables (carrots, potatoes, peas), diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 stalk Lemongrass, bruised
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Fresh coriander leaves, chopped

Instructions

  1. 1Rinse rice thoroughly. In a large pot, combine rice, chicken broth, coconut milk, onion, garlic, ginger, lemongrass, coriander powder, cumin powder, and turmeric powder.
  2. 2Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until rice is very soft and the porridge has thickened. Stir occasionally to prevent sticking.
  3. 3Add shredded chicken and mixed vegetables. Continue to simmer for another 15 minutes, or until vegetables are tender.
  4. 4Season with salt and pepper to taste.
  5. 5Remove lemongrass stalk. Garnish with fresh coriander leaves before serving.
