Ingredients

  • 2 cups Cooked Potatoes
  • 2 cups Cooked Cabbage
  • 1 cup Cooked Carrots
  • 1/2 cup Cooked Peas
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Prepare your ingredients: Cut the 2 cups of cooked potatoes, 2 cups of cooked cabbage, and 1 cup of cooked carrots into small, bite-sized pieces. Finely chop the 1/2 medium onion and mince the 2 cloves of garlic.
  2. 2Heat 2 tablespoons of olive oil in a large skillet over medium heat, which is about 175°C.
  3. 3Add the chopped onion and minced garlic to the hot skillet. Cook, stirring occasionally, for 3 to 5 minutes, or until the onion is softened and translucent, and the garlic is fragrant.
  4. 4Add the prepared 2 cups of cooked potatoes, 2 cups of cooked cabbage, 1 cup of cooked carrots, and 1/2 cup of cooked peas to the skillet. Stir everything together to combine with the onions and garlic.
  5. 5Season the vegetable mixture with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Mix well to distribute the seasonings evenly.
  6. 6Press the vegetables down firmly into the skillet to create a relatively flat surface. Cook for 10 to 15 minutes, without stirring too much, allowing a crispy, browned crust to form on the bottom. Flip sections of the mixture occasionally to brown other sides, aiming for golden-brown and crispy textures.
  7. 7Serve the Bubble and Squeak hot.
