Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 tbsp Lime juice
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 lb Cassava (Yuca), peeled and cubed
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 each Bell pepper (red or yellow), chopped
  • 2 tbsp Dendê oil (red palm oil)
  • 1 can (13.5 oz) Coconut milk
  • 2 tbsp Tomato paste
  • 0.25 cup Cilantro, chopped

Instructions

  1. 1Marinate the shrimp with lime juice, salt, and pepper for 15 minutes.
  2. 2Boil the cassava in salted water until tender, about 20 minutes.
  3. 3Drain the cassava and mash it with a fork or potato masher.
  4. 4In a large pot, sauté the onion, garlic, and bell pepper in dendê oil until softened, about 5 minutes.
  5. 5Add the tomato paste and cook for another 2 minutes.
  6. 6Stir in the mashed cassava and coconut milk.
  7. 7Bring to a simmer and cook for 5 minutes.
  8. 8Add the marinated shrimp and cook until pink and cooked through, about 5-7 minutes.
  9. 9Stir in the cilantro and serve hot with rice.
