Ingredients

  • 1/2 cup White Rice
  • 1 cup Water
  • 2 cups Coconut Milk
  • 1/2 cup Sugar
  • 1 piece Cinnamon Stick
  • 1/2 teaspoon Ground Cinnamon
  • 2 tablespoons Shredded Coconut

Instructions

  1. 1Rinse the rice under cold water.
  2. 2In a saucepan, combine rice and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the water is absorbed.
  3. 3Add coconut milk, sugar, and cinnamon stick to the saucepan. Bring to a simmer and cook for 20 minutes, stirring occasionally, until the rice is creamy and the pudding has thickened.
  4. 4Remove the cinnamon stick and stir in ground cinnamon.
  5. 5Divide the rice pudding into bowls and garnish with shredded coconut.
  6. 6Serve warm or cold.
