Ingredients

  • 3 cups Tapioca Flour
  • 1 cup Milk
  • 1/2 cup Olive Oil
  • 2 large Eggs
  • 1 1/2 cups Minas Cheese
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Fresh Herbs
  • 1 teaspoon Salt

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. 2In a blender, combine tapioca flour, milk, olive oil, and eggs. Blend until smooth.
  3. 3Add Minas cheese, Parmesan cheese, fresh herbs, and salt. Blend until just combined.
  4. 4Pour batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. 5Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  6. 6Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
