  • 1 cup Cornmeal
  • 2 cups Milk
  • 1 1/2 cups Sugar
  • 3 large Eggs
  • 1/2 cup Vegetable Oil
  • 1/2 cup Grated Parmesan Cheese
  • 1 tablespoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. 1Preheat your oven to 350°F (175°C). Take your 9-inch square baking pan and grease it, then dust it lightly with cornmeal. This stops the cake from sticking.
  2. 2Measure and add the 1 cup of cornmeal, 2 cups of milk, 1 1/2 cups of sugar, 3 large eggs, 1/2 cup of vegetable oil, 1/2 cup of grated Parmesan cheese, 1 tablespoon of baking powder, and 1/4 teaspoon of salt into your blender.
  3. 3Secure the lid on the blender and blend everything together until the mixture is completely smooth. This should take about 30-60 seconds.
  4. 4Carefully pour the smooth batter from the blender into the prepared 9-inch square baking pan.
  5. 5Place the pan in the preheated oven and bake for 45 to 55 minutes. The cake is done when a toothpick inserted into the center comes out with moist crumbs attached, meaning it's cooked through but still tender.
  6. 6Remove the baking pan from the oven and let the cake cool completely in the pan on a wire rack. This step is important for the cake to set properly before cutting.
