Bobotie with Fruity Chutney
A classic South African dish made with spiced minced meat, topped with a creamy turmeric-infused topping and served with a sweet and tangy fruit chutney. Egg substitute used in topping.
Ingredients
- 2 lb Ground Beef
- 1 large Onion
- 3 cloves Garlic
- 2 tbsp Curry Powder
- 1 tsp Turmeric
- 1 tsp Ground Coriander
- 1/2 cup Raisins
- 1/4 cup Almonds
- 2 slices Bread
- 1 cup Milk
- 1 tbsp Apple Cider Vinegar
- 1 cup Vegetable Broth
- 1 tbsp Cornstarch
- 2 tbsp Water
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 cup Apricot Jam
- To Serve Chutney
Instructions
- 1Preheat your oven to 350°F (175°C).
- 2In a small bowl, place the 2 slices of Bread and pour the 1 cup of Milk over them. Let them soak while you prepare the rest of the ingredients.
- 3Finely chop the 1 large Onion and mince the 3 cloves of Garlic. In a large pan over medium-high heat, add the 2 lb Ground Beef and cook, breaking it up with a spoon, until it is browned, about 8-10 minutes. Drain off any excess fat.
- 4Add the chopped onion and minced garlic to the pan with the browned ground beef. Cook, stirring, until the onion is softened, about 5 minutes. Stir in the 2 tbsp Curry Powder, 1 tsp Turmeric, 1 tsp Ground Coriander, 1/2 cup Raisins, 1/4 cup Almonds, 1 tsp Salt, and 1/2 tsp Black Pepper. Mix everything together well and cook for 1 minute more until fragrant.
- 5Squeeze out any excess milk from the soaked bread and add the bread to the meat mixture in the pan. Stir in the 1 tbsp Apple Cider Vinegar and 1 tbsp Apricot Jam. Mix until well combined.
- 6In a small bowl, whisk together the 1 tbsp Cornstarch and 2 tbsp Water until smooth. Pour the 1 cup Vegetable Broth into the pan with the meat mixture. Bring the broth to a simmer over medium heat. Stir in the cornstarch slurry and continue to simmer, stirring constantly, until the mixture has thickened, about 2-3 minutes.
- 7Pour the entire meat mixture into a baking dish. Bake in the preheated oven at 350°F (175°C) for 45-50 minutes, or until the top is golden brown and the mixture is set.
- 8Let the Bobotie rest for 5-10 minutes before serving. Serve hot with your Chutney.
