Bo Bia (Vietnamese Crepe Rolls)

Ingredients

  • 1 cup Rice Flour
  • 1/2 cup Tapioca Starch
  • 2 cups Water
  • 1/4 teaspoon Turmeric Powder
  • 1 tablespoon Vegetable Oil
  • 1 cup Shredded Coconut
  • 1/4 cup Sesame Seeds
  • 1/2 cup Sugar
  • 1/4 cup Water
  • 2 tablespoons Maltose (or Honey)

Instructions

  1. 1In a bowl, whisk together rice flour, tapioca starch, water, and turmeric powder to form a smooth batter.
  2. 2Heat a non-stick skillet over medium heat. Brush lightly with vegetable oil.
  3. 3Pour a thin layer of batter onto the skillet and cook for 1-2 minutes per side, or until lightly golden. Repeat to make several crepes.
  4. 4Toast sesame seeds in dry pan until fragrant.
  5. 5In a saucepan, combine sugar, water, and maltose. Cook over medium heat, stirring constantly, until the sugar is dissolved and the syrup has thickened slightly.
  6. 6Fill each crepe with shredded coconut, sesame seeds, and a drizzle of the sweet syrup.
  7. 7Roll up the crepes and serve immediately.
