Ingredients

  • 4 Catfish fillets
  • 2 tablespoons Blackening seasoning
  • 1 lb Okra
  • 1 14.5 oz can Diced tomatoes
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive oil

Instructions

  1. 1Season the catfish fillets generously with blackening seasoning.
  2. 2Heat the olive oil in a large skillet over medium-high heat.
  3. 3Add the catfish fillets and cook for 3-4 minutes per side, until blackened and cooked through.
  4. 4Remove the catfish from the skillet and set aside.
  5. 5Add the onion and okra to the skillet and cook until softened, about 5-7 minutes.
  6. 6Add the garlic and cook for another minute until fragrant.
  7. 7Stir in the diced tomatoes and cook for another 5 minutes.
  8. 8Serve the blackened catfish over the okra and tomatoes.
