Ingredients

  • 4 6 oz each Catfish fillets
  • 2 tablespoons Blackening seasoning
  • 2 tablespoons Olive oil
  • 4 cups Cooked rice
  • 0.5 lb Ground pork
  • 0.5 medium Onion
  • 0.5 medium Bell pepper
  • 1 stalk Celery
  • 2 cloves Garlic
  • 0.5 cup Chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/4 cup Green onions

Instructions

  1. 1Prepare the dirty rice: In a skillet, brown ground pork. Add onion, bell pepper, and celery and cook until softened. Add garlic and cook for 1 minute more.
  2. 2Stir in cooked rice, chicken broth, and Cajun seasoning. Heat through and stir in green onions.
  3. 3Season catfish fillets generously with blackening seasoning.
  4. 4Heat olive oil in a large skillet over medium-high heat. Sear catfish fillets for 3-4 minutes per side, or until cooked through and blackened.
