Ingredients

  • 2 cans Black beans, rinsed and drained
  • 0.75 cup Cooked brown rice
  • 0.5 cup Red onion, finely chopped
  • 0.5 cup Corn kernels
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Gluten-free breadcrumbs
  • 2 tablespoons Flaxseed meal
  • 6 tablespoons Water
  • 1 count Avocado
  • 2 tablespoons Lime juice
  • 0.25 cup Cilantro, chopped
  • 2 tablespoons Dairy-free sour cream
  • 4 count Gluten-free burger buns
  • 2 tablespoons Olive oil

Instructions

  1. 1In a large bowl, mash 1 can of black beans with a fork until mostly broken down. Add the second can of black beans (whole), 0.75 cup cooked brown rice, 0.5 cup finely chopped red onion, 0.5 cup corn kernels, 1 tablespoon chili powder, 1 teaspoon cumin, 0.5 teaspoon garlic powder, and 0.5 cup gluten-free breadcrumbs to the bowl.
  2. 2In a small bowl, combine 2 tablespoons flaxseed meal with 6 tablespoons water. Stir well and let it sit for 5 minutes to form a thick, gel-like mixture. Add this flaxseed mixture to the black bean mixture in the large bowl.
  3. 3Mix all the ingredients in the large bowl thoroughly with your hands or a sturdy spoon until well combined. Divide the mixture into 4 equal portions and shape each portion into a patty, about 3/4-inch thick.
  4. 4Heat 2 tablespoons olive oil in a large 12-inch skillet over medium heat, which is about 350°F (175°C). Carefully place the 4 black bean patties into the hot skillet. Cook for 5-7 minutes on the first side, until golden brown and firm to the touch. Flip the patties and cook for another 5-7 minutes on the second side, until browned and heated through.
  5. 5While the burgers are cooking, prepare the avocado crema. Combine 1 avocado, 2 tablespoons lime juice, 0.25 cup chopped cilantro, and 2 tablespoons dairy-free sour cream in a blender or food processor. Blend until the mixture is completely smooth and creamy.
  6. 6Serve the cooked black bean burgers on 4 gluten-free burger buns. Top each burger with the prepared avocado crema and any other desired toppings.
