Ingredients

  • 500 g Plant-based Ground Meat
  • 50 g Tapioca Starch
  • 50 g Dairy-free Butter
  • 50 g All-purpose Flour
  • 500 ml Vegetable Broth
  • 1/2 tsp Nutmeg
  • 2 tbsp Parsley, chopped
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 100 ml Dairy-free Milk
  • 150 g Panko Breadcrumbs
  • 500 ml Vegetable Oil

Instructions

  1. 1In a large pan over medium heat, melt the 50 g of dairy-free butter. Add the 50 g of all-purpose flour and cook, stirring constantly with a whisk, for 2 minutes until it forms a paste.
  2. 2Gradually whisk in the 500 ml of vegetable broth, a little at a time, ensuring there are no lumps. Bring the mixture to a simmer and cook, stirring often, for about 5 minutes, or until it has thickened to a paste-like consistency.
  3. 3Stir in the 500 g of plant-based ground meat, 50 g of tapioca starch, 1/2 tsp of nutmeg, 2 tbsp of chopped parsley, 1 tsp of salt, and 1/2 tsp of pepper. Mix everything together thoroughly and cook for 10 minutes, stirring frequently, until well combined and heated through.
  4. 4Transfer the mixture to a shallow dish or tray and spread it out evenly. Cover the dish and refrigerate for at least 1 hour, or until completely cool and firm. This chilling step is important to make the mixture easier to shape.
  5. 5Once the mixture is firm, scoop out portions and roll them between your palms to form small balls, about 1 inch in diameter. You should have about 20-25 balls.
  6. 6Pour the 100 ml of dairy-free milk into one shallow bowl and place the 150 g of panko breadcrumbs into another shallow bowl. Dip each ball first into the dairy-free milk, ensuring it is fully coated, then roll it in the panko breadcrumbs, pressing gently to adhere the crumbs.
  7. 7In a deep fryer or a large, heavy-bottomed pot, heat the 500 ml of vegetable oil to 175°C (350°F). Carefully lower the breaded balls into the hot oil in batches, being careful not to overcrowd the pot. Fry for 3-5 minutes, or until they are deep golden brown and crispy.
  8. 8Using a slotted spoon, carefully remove the fried bitterballen from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve the hot bitterballen immediately.
