Binatog (Corn with Coconut)

A simple and satisfying Filipino snack made from boiled white corn kernels, topped with grated coconut, salt, and sometimes condensed milk (we use dairy-free!). A sweet and savory treat.

Ingredients

  • 4 cups White corn kernels (fresh or frozen)
  • 6 cups Water
  • to taste Salt
  • 1 cup Grated coconut (fresh or unsweetened)
  • 1/4 cup Dairy-free sweetened condensed milk

Instructions

  1. 1If using fresh corn, shuck the corn and remove the kernels. If using frozen corn, thaw it.
  2. 2In a pot, combine the corn kernels and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the corn is tender.
  3. 3Drain the corn and season with salt to taste.
  4. 4Serve warm, topped with grated coconut and a drizzle of dairy-free sweetened condensed milk (if using).
