Ingredients

  • 12 oz Thin Wheat Noodles (Somen or Korean wheat noodles)
  • 4 tablespoons Gochujang (Korean Chili Paste)
  • 3 tablespoons Rice Vinegar
  • 2 tablespoons Soy Sauce (or Tamari for gluten-free)
  • 1 tablespoon Sugar
  • 1 tablespoon Sesame Oil
  • 1 clove Garlic (minced)
  • 1/2 cup Cucumber (julienned)
  • 1/2 cup Carrot (julienned)
  • 1/2 cup Kimchi (chopped)
  • 1 tablespoon Sesame Seeds (for garnish)

Instructions

  1. 1Place a large heavy-bottomed pot on the stove and add enough water to fill it about two-thirds full. Heat the water over high heat until it reaches a rolling boil, which is approximately 212°F (100°C).
  2. 2Carefully add the 12 oz Thin Wheat Noodles to the vigorously boiling water. Cook the noodles for 3 to 5 minutes, stirring occasionally, until they are tender but still have a slight chew when tasted.
  3. 3Immediately pour the cooked noodles into a colander in the sink. Rinse the noodles thoroughly under cold running water for at least 1 minute, tossing them gently, until they are completely cool to the touch. Shake the colander well to remove as much water as possible, then let them drain for 5 minutes to prevent them from becoming watery.
  4. 4In a large mixing bowl, combine the 4 tablespoons Gochujang, 3 tablespoons Rice Vinegar, 2 tablespoons Soy Sauce, 1 tablespoon Sugar, 1 tablespoon Sesame Oil, and 1 clove minced Garlic. Whisk these ingredients together vigorously until the sauce is smooth and well combined.
  5. 5Add the cooled and well-drained 12 oz Thin Wheat Noodles to the large bowl with the prepared sauce. Using tongs or chopsticks, gently toss the noodles for 1-2 minutes, ensuring every strand is evenly coated with the sauce.
  6. 6Add the 1/2 cup julienned Cucumber, 1/2 cup julienned Carrot, and 1/2 cup chopped Kimchi to the bowl with the sauced noodles. Gently toss all the ingredients together until they are evenly distributed throughout the noodles.
  7. 7Divide the Bibim Guksu evenly among four individual serving bowls. Sprinkle 1 tablespoon Sesame Seeds over the top of the noodles in each bowl as a garnish before serving.
